Let’s get started with the first food post of 2015, shall we?
After all the holiday fun food, my husband and I are looking to lighten up our meals and I found this great recipe that fit the bill. Here’s another keeper, because it is quick, easy and delicious. Sometimes it’s tough to be inspired to cook green veggies, but this recipe definitely lets Swiss Chard show its jazz hands.
A recipe like this can help leafy greens like Collards and Kale get jazzed up, too. 😀
Here’s the recipe:
Swiss Chard with Caramelized Onions & Pecans
1 bunch of Swiss Chard, washed and chopped
1 onion (red or white), sliced
2 tbsp olive oil
1/4 cup candied pecans (optional)
1/4 cup raw pecans
Handful raisins or cranberries
Set the oven for 400 F. Then, chop up the onion, mix it with a drizzle of olive oil and place them on a baking sheet. Bake for 20 minutes. Stir them around at about 10 minutes in to ensure even cooking.
While the onions bake, sauté the Swiss Chard in a little water and 1 tbsp olive oil until the leaves are tender and bright green.
Chop the pecans into pieces.
In a bowl combine the swiss chard, caramelized onions, pecans and raisins. Toss with a drizzle of olive oil and sea salt to taste.
This makes a delicious side dish that will make you want seconds… and that’s a good thing when it comes to your greens! 🙂
