“Free, Free, Free” Oatmeal Cookie
3 ripe bananas, mashed
1/4-1/3 cup unsweetened apple sauce
1 tsp baking powder
1 tsp vanilla
1/4 cup almond or rice milk
2 cups oatmeal
As much of these ingredients as you want… in any combination: walnuts, pecans, chocolate chips, raisins, dried cranberries, date pieces shredded coconut, ground flax seed, chia seed.
*In the recipe pic that I posted I used 1 cup walnuts, 1/2 cup semi-sweet chocolate chips and 1 cup unsweetened shredded coconut. For a nut-free version I did to send to school with my son I added 1/2 cup ground flax seed, 1/2 cup raisins and 1/2 cup semi-sweet chocolate chips.
Mix everything together.
Using a tablespoon, scoop up the batter and place on a parchment paper lined cookie sheet. Use your fingers to gently push the batter together if needs to be formed a bit.
Bake at 350 degrees for 20 minutes or until the cookies are golden. Enjoy!
