I was introduced to this snack back in my days as a fledgling ND student. This quick and easy snack is still one of my favourites. It always seems to hit the spot: a little crunch, a little sweet and some almond butter to make it a snack with staying power.
Here’s the recipe:
1 Plain Brown Rice Cake, unsalted) (Like the ones made by Lundberg)
Almond Butter (or Peanut Butter, Sunflower seed butter, Cashew Butter, etc.)
Topping Options: Banana slices, apple slices, berries, medjool dates, or a mix of them!
Spread nut or seed butter over rice cake. Top with fruit options of choice. Sprinkle with cinnamon. Enjoy!
