This is by far one of my most favourite healthy treat recipes. This is… Raw Pecan Pie Squares.
They are so simple to make, and yet, it’s taken me this long to get to make them for all of you to see! That being said, I made them in about 10 minutes between dinner clean up and bath time! Truly, these are quick and easy to make.
On a more serious note… these little sweethearts can honestly pass for the real thing. They have a caramel-like flavour to them, they hold together really well and the delectable deliciousness factor is off the charts.
I must pay a homage to the creator of this fabulous recipe! This recipe was dreamt up by my longtime friend and colleague Lisa. She wears many hats, and once upon a time, I attended an amazing raw foods class by Lisa and that is when I met this treasure in my collection of healthy recipes!
…And without further adieu… here we go!
PECAN PIE SQUARES
2 cups almonds
1/8 cup agave (I used maple syrup)
1/4 cup coconut oil
1/8 tsp sea salt
Process the almonds in a food processor until it starts to become flour like. Add remaining ingredients and continue processing until it starts to collect in a ball. Press into the bottom of a squares pan (I used a 9×4 inch pan).
25 medjool dates (soft, if not, soak for 15-20 minutes)
1 tablespoon of lemon juice
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp sea salt
2 cups pecan pieces
Process all the ingredients, except the pecan pieces, in food processor until smooth. Press/spread over crust. Press pecan pieces into filling.
Chill for about an hour before serving.
