Summer weekends are so full of fun and things to do. Who wants to be cooped up in the kitchen cooking away? That being said, a quick prep of a healthy meal is very do-able. I have a couple of quick ways to prep healthy, delicious, nutrient dense, cooked vegetables in less than 10 minutes!
These recipes can be applied to so many different vegetables… so they can be used as a general guideline for the preparation of almost any veg. Add a bean salad, your favorite barbequed meat or a fresh sandwich, and a quick summer meal can be made in a jiffy… vegetables included!
Here’s how it can happen for you…
Broccoli & Cauliflower Medley in Less Than 10
Bring a large pot of water to boil.
Wash and chop half a cauliflower and 2 stalks of broccoli.
Throw the veggies into the water and let cook for no more than 5 minutes or when the broccoli is BRIGHT green and tender-crisp.
Strain the water from the veggies. Throw the veggies into a large bowl. Toss with olive oil and sea salt to taste. Enjoy!
Sautéed Peppers in Less Than 10
Wash and slice 1 red bell pepper and 1 yellow bell pepper.
Slice 1/4-1/2 red onion.
Heat a tablespoon of water and a tablespoon of olive oil in a pan.
Throw the peppers and onions in.
Cook on Medium-High heat, stirring often, until the onions and peppers brown a bit and start appearing to be caramelized.
Season with sea salt to taste.
