What to do with Eggplants?

The season of eggplants is upon us!  I have a couple family members who grow vegetable gardens and the eggplant parade has begun at our house.  I’m always so grateful for home grown veggies!  Eggplants can be a bit of a challenge when it comes to inspiring ways to cook them.  I enjoy baking them in the oven in different ways.  Today I’m sharing a quick, easy and tasty way to enjoy them!


Cut Eggplant into rounds and place on a cookie sheet that has been coated with a thin layer of olive oil.

Eggplant rounds should be about 1/2 inch thick.  Any thinner that this and they will burn, turn crispy or stick to the cookie sheet.

Put a spoonful of fresh authentic tomato sauce in the centre of each round.  If time allows, top with fresh made tomato sauce.  In a pinch, like I did here, I used Commisso’s Tomato Basil sauce.  It’s a quick option that’s made fresh at the store from real ingredients and it’s tasty!

Top with a slice of tomato and place in the oven.  Bake at 350 F for 15-20 minutes, until the Eggplant is soft.  Check on it half way to be sure the eggplant isn’t sticking to the cookie sheet.

Garnish with fresh Basil and enjoy!
